Our pasture-raised St. Louis-style ribs come from pigs raised completely outdoors, where they roam freely, forage naturally, and enjoy sunshine and space to move. Raised using regenerative farming practices, our pigs help support healthier soil, ecosystems, and more nutrient-dense food.
St. Louis-style ribs are a classic barbecue cut, trimmed from the belly side of the spare ribs into a uniform, rectangular shape. This cut offers the perfect balance of meat and fat, making it especially flavorful and ideal for slow cooking, smoking, or grilling. The even shape also helps them cook more consistently—perfect for both backyard BBQs and serious pitmasters.
